Fine dining does not need to be overwrought and overcomplicated. It takes boldness to work with fresh ingredients you truly understand and present a traditional dish in an unfussy way that honors its sometimes-humble history. And it really takes guts to open a giant Swedish/American restaurant in one of the most restaurant-dense areas of Naples, especially when most of the population knows very little about Swedish cuisine.
I admire people with guts, which is why I was excited to join a group of five women at the newly opened Waxin’s in Mercato this past Saturday.
